Considering the time of onset and the lab reports of the Gibsons' it is obvious that the organism involved is Salmonella serotype Enteritidis bacterium. The turkey was left at room temperature for 4 hours from 2:00 PM to 6:00 PM. The salmonella bacteria multiplies rapidly in cooked food which is left at room temperature and the cooked turkey becomes unfit for consumption after two hours if it is left at room temperature.
